Indian Style Scrambled Eggs

I came across Sanjeev Kapoor’s recipe of Andra Bhurji. I adjusted the amounts to bring it down to a single serving. Its a very quick and simple recipe to whip up.





2 eggs, beaten

1/4 onion, chopped

1/4 tomato, chopped

1/4 tsp cumin seeds

1/4 tsp tumeric powder

1/4 tsp red chilli powder

1/2 tsp cumin and coriander powder

coriander, chopped

salt to taste




  1. Heat the butter in a frying pan and add in the onions and cumin seeds. Sauté till the onions are soft and slightly browned.
  2. Add in tomatoes, spices and coriander. Mix well and allow to cook until tomatoes are soft.
  3. Stir in the scrambled eggs and cook till done. Keep stirring to ensure it all mixes well.
